Arsik (coconut Milk Stewed Chicken)

Ingredients

  • 1 whole chicken, cut into pieces
  • 2 cups coconut milk
  • 4 shallots, thinly sliced
  • 4 cloves garlic, minced
  • 2 tomatoes, diced
  • 2 red chilies, sliced
  • 1 inch galangal, sliced
  • 1 stalk lemongrass, bruised
  • 1 teaspoon turmeric powder
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 2 tablespoons oil
  • 3 cups water

Instructions

  1. In a large pot, heat the oil over medium heat. Add the shallots, garlic, and red chilies. Sauté until fragrant.
  2. Add the chicken pieces to the pot and cook until they are browned on all sides.
  3. Pour in the coconut milk and water. Add the tomatoes, galangal, lemongrass, turmeric powder, salt, and sugar. Stir well to combine.
  4. Cover the pot and let the chicken simmer for 45-50 minutes, or until the chicken is tender and the sauce has thickened.
  5. Remove the lemongrass stalk before serving.
