Arsik (coconut Milk Stewed Pork)
Arsik is a traditional Batak cuisine dish from Indonesia, featuring tender pork stewed in a rich and aromatic coconut milk sauce. This dish is bursting with flavor and is perfect for a comforting and satisfying meal.
Ingredients
- 1 kg pork shoulder, cut into chunks
- 2 cups coconut milk
- 4 shallots, finely chopped
- 4 cloves garlic, minced
- 2 tomatoes, diced
- 3 red chilies, sliced
- 1 inch ginger, grated
- 1 stalk lemongrass, bruised
- 1 tsp turmeric powder
- 1 tsp salt
- 1/2 tsp ground coriander
- 1/2 tsp ground cumin
- 1/2 tsp sugar
- 2 tbsp vegetable oil
- 2 cups water
Instructions
- Heat vegetable oil in a large pot over medium heat. Add shallots, garlic, and ginger. Sauté until fragrant.
- Add pork chunks and cook until browned on all sides.
- Stir in turmeric powder, ground coriander, and ground cumin. Cook for 2 minutes.
- Pour in coconut milk and water. Add lemongrass, tomatoes, red chilies, salt, and sugar. Stir well.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1 hour, or until the pork is tender.
- Remove the lemongrass stalk before serving.
