Arsik (coconut Milk Stewed Pork)

Ingredients

  • 1 kg pork shoulder, cut into chunks
  • 2 cups coconut milk
  • 4 shallots, finely chopped
  • 4 cloves garlic, minced
  • 2 tomatoes, diced
  • 3 red chilies, sliced
  • 1 inch ginger, grated
  • 1 stalk lemongrass, bruised
  • 1 tsp turmeric powder
  • 1 tsp salt
  • 1/2 tsp ground coriander
  • 1/2 tsp ground cumin
  • 1/2 tsp sugar
  • 2 tbsp vegetable oil
  • 2 cups water

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add shallots, garlic, and ginger. Sauté until fragrant.
  2. Add pork chunks and cook until browned on all sides.
  3. Stir in turmeric powder, ground coriander, and ground cumin. Cook for 2 minutes.
  4. Pour in coconut milk and water. Add lemongrass, tomatoes, red chilies, salt, and sugar. Stir well.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1 hour, or until the pork is tender.
  6. Remove the lemongrass stalk before serving.
