Arsik (coconut Milk Stewed Pork Belly)

Ingredients

  • 1 kg pork belly, cut into cubes
  • 2 cups coconut milk
  • 4 shallots, finely chopped
  • 4 cloves garlic, minced
  • 2 tomatoes, diced
  • 3 red chilies, sliced
  • 1 inch ginger, grated
  • 1 stalk lemongrass, bruised
  • 1 tsp turmeric powder
  • 1 tsp salt
  • 1/2 tsp sugar
  • 2 cups water

Instructions

  1. In a large pot, combine the pork belly, coconut milk, shallots, garlic, tomatoes, red chilies, ginger, lemongrass, turmeric powder, salt, sugar, and water.
  2. Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer for 2 hours, stirring occasionally.
  3. Once the pork belly is tender and the sauce has thickened, remove the lemongrass stalk.
  4. Serve the Arsik hot with steamed rice.
