Arsik (coconut Milk Stewed Pork Belly)
Arsik is a traditional Batak cuisine dish from Indonesia, featuring tender pork belly stewed in a flavorful coconut milk sauce. This dish is rich, aromatic, and perfect for a comforting meal.
Ingredients
- 1 kg pork belly, cut into cubes
- 2 cups coconut milk
- 4 shallots, finely chopped
- 4 cloves garlic, minced
- 2 tomatoes, diced
- 3 red chilies, sliced
- 1 inch ginger, grated
- 1 stalk lemongrass, bruised
- 1 tsp turmeric powder
- 1 tsp salt
- 1/2 tsp sugar
- 2 cups water
Instructions
- In a large pot, combine the pork belly, coconut milk, shallots, garlic, tomatoes, red chilies, ginger, lemongrass, turmeric powder, salt, sugar, and water.
- Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer for 2 hours, stirring occasionally.
- Once the pork belly is tender and the sauce has thickened, remove the lemongrass stalk.
- Serve the Arsik hot with steamed rice.
