Arsik (coconut Milk Stewed Pork Ribs)

Ingredients

  • 2 lbs pork ribs
  • 1 can (14 oz) coconut milk
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 2 red chilies, sliced
  • 1 tsp turmeric powder
  • 1 tsp ginger, grated
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp cooking oil
  • 2 cups water

Instructions

  1. In a large pot, heat the cooking oil over medium heat. Add the sliced onion, minced garlic, and sliced red chilies. Sauté until fragrant.
  2. Add the pork ribs to the pot and cook until browned on all sides.
  3. Stir in the turmeric powder, grated ginger, salt, and black pepper. Mix well to coat the pork ribs with the spices.
  4. Pour in the coconut milk and water. Bring to a simmer, then reduce the heat to low. Cover and let it simmer for about 2 hours, or until the pork ribs are tender.
  5. Once the pork ribs are tender, uncover the pot and let the sauce thicken for a few more minutes.
  6. Remove from heat and serve the Arsik hot with steamed rice.
