Arsik (coconut Milk Stewed Pork Ribs)
Arsik is a traditional Batak dish from Indonesia, featuring tender pork ribs stewed in a rich and aromatic coconut milk sauce. This flavorful and comforting dish is perfect for a special family dinner or a gathering with friends.
Ingredients
- 2 lbs pork ribs
- 1 can (14 oz) coconut milk
- 1 large onion, sliced
- 3 cloves garlic, minced
- 2 red chilies, sliced
- 1 tsp turmeric powder
- 1 tsp ginger, grated
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp cooking oil
- 2 cups water
Instructions
- In a large pot, heat the cooking oil over medium heat. Add the sliced onion, minced garlic, and sliced red chilies. Sauté until fragrant.
- Add the pork ribs to the pot and cook until browned on all sides.
- Stir in the turmeric powder, grated ginger, salt, and black pepper. Mix well to coat the pork ribs with the spices.
- Pour in the coconut milk and water. Bring to a simmer, then reduce the heat to low. Cover and let it simmer for about 2 hours, or until the pork ribs are tender.
- Once the pork ribs are tender, uncover the pot and let the sauce thicken for a few more minutes.
- Remove from heat and serve the Arsik hot with steamed rice.
