Ingredients

  • 4 large artichokes
  • 1 cup cooked rice
  • 1 lb ground beef

  • 1 tomato, diced
  • 1/4 cup chopped parsley
  • 1/2 cup bread crumbs

Instructions

  1. Prepare the artichokes by cutting off the stems and removing the tough outer leaves.
  2. Cook the artichokes in boiling water for 15-20 minutes, or until tender. Drain and set aside to cool.
  3. In a large bowl, mix together the cooked rice, ground beef, onion, garlic, bell pepper, tomato, parsley, bread crumbs, Parmesan cheese, salt, and pepper.
