Ingredients
- 4 large artichokes
- 1 cup cooked rice
- 1 lb ground beef
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 bell pepper, diced
- 1 tomato, diced
- 1/4 cup chopped parsley
- 1/2 cup bread crumbs
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- 1/4 cup olive oil
Instructions
- Prepare the artichokes by cutting off the stems and removing the tough outer leaves.
- Cook the artichokes in boiling water for 15-20 minutes, or until tender. Drain and set aside to cool.
- In a large bowl, mix together the cooked rice, ground beef, onion, garlic, bell pepper, tomato, parsley, bread crumbs, Parmesan cheese, salt, and pepper.
- Carefully stuff the artichokes with the rice and beef mixture, pressing it firmly into the leaves.
- Heat the olive oil in a large skillet over medium heat. Place the stuffed artichokes in the skillet and cook for 10-15 minutes, or until the beef is fully cooked and the artichokes are golden brown.
