Ingredients
- 4 boneless, skinless chicken breasts
- 1 can (14 oz) artichoke hearts, drained and chopped
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Season the chicken breasts with salt, pepper, and dried oregano.
- In a large skillet, heat some olive oil over medium-high heat.
- Add the chicken breasts to the skillet and cook for 6-7 minutes on each side, or until fully cooked.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add minced garlic and cook for 1-2 minutes.
- Add the chopped artichoke hearts and chicken broth to the skillet, and simmer for 5 minutes.
- Return the chicken to the skillet, sprinkle with Parmesan cheese, and cook for an additional 2-3 minutes.
- Serve the artichoke chicken hot, garnished with additional Parmesan cheese if desired.
