Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with salt, pepper, and dried oregano.
  2. In a large skillet, heat some olive oil over medium-high heat.
  3. Add the chicken breasts to the skillet and cook for 6-7 minutes on each side, or until fully cooked.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add minced garlic and cook for 1-2 minutes.
  6. Add the chopped artichoke hearts and chicken broth to the skillet, and simmer for 5 minutes.
  7. Return the chicken to the skillet, sprinkle with Parmesan cheese, and cook for an additional 2-3 minutes.
  8. Serve the artichoke chicken hot, garnished with additional Parmesan cheese if desired.
