Ingredients
- 4 fillets of white fish (such as tilapia or cod)
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 tablespoon paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cloves garlic, minced
- 1 onion, thinly sliced
- 1 tomato, diced
- 1 jalapeño pepper, thinly sliced (optional for extra heat)
- Fresh cilantro for garnish
Instructions
- In a small bowl, mix together the olive oil, lemon juice, paprika, cayenne pepper, cumin, coriander, salt, black pepper, and minced garlic to create the marinade.
- Place the fish fillets in a shallow dish and pour the marinade over them, ensuring they are evenly coated. Cover and refrigerate for at least 30 minutes.
- Preheat the grill to medium-high heat. Remove the fish from the marinade and grill for 4-5 minutes on each side, or until the fish is cooked through and has grill marks.
- While the fish is grilling, heat a small amount of olive oil in a pan over medium heat. Sauté the sliced onion, diced tomato, and jalapeño pepper until softened.
- Once the fish is done, transfer it to a serving platter and top with the sautéed vegetables. Garnish with fresh cilantro and serve hot.
