Asam Pade (tamarind Soup With Beef Ribs)
Asam Pade is a traditional Batak cuisine dish from Indonesia, featuring a tangy tamarind soup with tender beef ribs. This hearty and flavorful soup is perfect for a comforting meal, especially during cooler weather.
Ingredients
- 1 kg beef ribs
- 2 liters water
- 200g tamarind pulp
- 4 tomatoes, quartered
- 4 shallots, thinly sliced
- 4 cloves garlic, minced
- 2 red chilies, sliced
- 2 lemongrass stalks, bruised
- 4 kaffir lime leaves
- Salt to taste
Instructions
- In a large pot, bring water to a boil and add the beef ribs. Cook for 1 hour or until the beef is tender.
- While the beef is cooking, soak the tamarind pulp in 1 cup of warm water for 15 minutes. Squeeze the pulp to extract the juice, then strain and discard the solids.
- Once the beef is tender, add the tamarind juice, tomatoes, shallots, garlic, red chilies, lemongrass, and kaffir lime leaves to the pot. Simmer for another 30 minutes.
- Season with salt to taste and serve hot.
