Asam Pade (tamarind Soup With Beef Ribs)

Ingredients

  • 1 kg beef ribs
  • 2 liters water
  • 200g tamarind pulp
  • 4 tomatoes, quartered
  • 4 shallots, thinly sliced
  • 4 cloves garlic, minced
  • 2 red chilies, sliced
  • 2 lemongrass stalks, bruised
  • 4 kaffir lime leaves
  • Salt to taste

Instructions

  1. In a large pot, bring water to a boil and add the beef ribs. Cook for 1 hour or until the beef is tender.
  2. While the beef is cooking, soak the tamarind pulp in 1 cup of warm water for 15 minutes. Squeeze the pulp to extract the juice, then strain and discard the solids.
  3. Once the beef is tender, add the tamarind juice, tomatoes, shallots, garlic, red chilies, lemongrass, and kaffir lime leaves to the pot. Simmer for another 30 minutes.
  4. Season with salt to taste and serve hot.
