Asam Pade (tamarind Soup With Catfish)

Ingredients
- 500g catfish fillets, cut into chunks
- 2 tomatoes, diced
- 3 shallots, thinly sliced
- 4 cloves garlic, minced
- 2 red chilies, sliced
- 3 tablespoons tamarind paste
- 1 stalk lemongrass, bruised
- 4 kaffir lime leaves
- 1 teaspoon salt
- 1 teaspoon sugar
- 4 cups water
- 2 tablespoons cooking oil
Instructions
- In a large pot, heat the cooking oil over medium heat.
- Add the shallots, garlic, and red chilies. Sauté until fragrant.
- Add the catfish chunks and cook until they turn opaque.
- Pour in the water, tamarind paste, lemongrass, kaffir lime leaves, tomatoes, salt, and sugar. Stir well.
- Simmer for 30 minutes until the flavors are well combined and the catfish is tender.
- Adjust the seasoning if needed.
- Serve hot with steamed rice.
