Asam Pade (tamarind Soup With Catfish)

Ingredients

  • 500g catfish fillets, cut into chunks
  • 2 tomatoes, diced
  • 3 shallots, thinly sliced
  • 4 cloves garlic, minced
  • 2 red chilies, sliced
  • 3 tablespoons tamarind paste
  • 1 stalk lemongrass, bruised
  • 4 kaffir lime leaves
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 4 cups water
  • 2 tablespoons cooking oil

Instructions

  1. In a large pot, heat the cooking oil over medium heat.
  2. Add the shallots, garlic, and red chilies. Sauté until fragrant.
  3. Add the catfish chunks and cook until they turn opaque.
  4. Pour in the water, tamarind paste, lemongrass, kaffir lime leaves, tomatoes, salt, and sugar. Stir well.
  5. Simmer for 30 minutes until the flavors are well combined and the catfish is tender.
  6. Adjust the seasoning if needed.
  7. Serve hot with steamed rice.
