Ingredients
- 2 cups cooked and mashed yam
- 2 ripe plantains, mashed
- 1 pound ground beef
- 1 onion, chopped
- 2 tomatoes, diced
- 1 bell pepper, diced
- 2 cups beef or vegetable broth
- 1 teaspoon thyme
- 1 teaspoon curry powder
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon as it cooks.
- Stir in the diced tomatoes, bell pepper, thyme, curry powder, salt, and pepper. Cook for 5 minutes.
- Pour in the beef or vegetable broth and simmer for 15 minutes, allowing the flavors to meld together.
- Preheat the oven to 375°F (190°C).
- In a greased baking dish, spread the cooked beef mixture evenly.
- In a bowl, combine the mashed yam and mashed plantains. Spread this mixture over the beef in the baking dish.
- Bake for 25-30 minutes, or until the topping is golden brown.
