Asaro Shepherd's Pie

Ingredients

  • 2 cups cooked and mashed yam
  • 2 ripe plantains, mashed
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 1 bell pepper, diced
  • 2 cups beef or vegetable broth
  • 1 teaspoon thyme
  • 1 teaspoon curry powder
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon as it cooks.
  3. Stir in the diced tomatoes, bell pepper, thyme, curry powder, salt, and pepper. Cook for 5 minutes.
  4. Pour in the beef or vegetable broth and simmer for 15 minutes, allowing the flavors to meld together.
  5. Preheat the oven to 375°F (190°C).
  6. In a greased baking dish, spread the cooked beef mixture evenly.
  7. In a bowl, combine the mashed yam and mashed plantains. Spread this mixture over the beef in the baking dish.
  8. Bake for 25-30 minutes, or until the topping is golden brown.
