Ingredients

  • 1 cup lentils
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 6 cups vegetable broth
  • 1 cup chopped spinach
  • 1/2 cup chopped parsley
  • 1/2 cup chopped cilantro
  • 1/2 cup chopped dill
  • 1/2 cup chopped green onions
  • 1/2 cup vermicelli or thin egg noodles
  • 1 cup plain yogurt
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until softened.
  2. Add the carrots and celery, and cook for another 5 minutes.
  3. Stir in the lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes.
  4. Add the vermicelli or egg noodles, spinach, parsley, cilantro, dill, and green onions. Cook for an additional 10 minutes, or until the noodles are tender.
  5. Season with salt and pepper to taste.
  6. Remove the pot from the heat and stir in the plain yogurt until well combined.
  7. Serve the Ash Reshteh hot, garnished with additional herbs if desired.
