Ash Reshteh (creamy Lentil And Vegetable Soup)
Ash Reshteh is a traditional Bukharan Jewish creamy lentil and vegetable soup that is hearty, nutritious, and bursting with flavor. This comforting soup is perfect for a cozy family meal or to serve to guests on a chilly evening.
Ingredients
- 1 cup lentils
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, chopped
- 6 cups vegetable broth
- 1 cup chopped spinach
- 1/2 cup chopped parsley
- 1/2 cup chopped cilantro
- 1/2 cup chopped dill
- 1/2 cup chopped green onions
- 1/2 cup vermicelli or thin egg noodles
- 1 cup plain yogurt
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until softened.
- Add the carrots and celery, and cook for another 5 minutes.
- Stir in the lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes.
- Add the vermicelli or egg noodles, spinach, parsley, cilantro, dill, and green onions. Cook for an additional 10 minutes, or until the noodles are tender.
- Season with salt and pepper to taste.
- Remove the pot from the heat and stir in the plain yogurt until well combined.
- Serve the Ash Reshteh hot, garnished with additional herbs if desired.
