Ingredients
- 1 lb beef stew meat, cubed
- 1 cup dried brown lentils
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 6 cups beef broth
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the beef cubes and brown on all sides.
- Add the chopped onion and minced garlic to the pot, and sauté until fragrant.
- Stir in the diced carrots and celery, and cook for a few minutes until slightly softened.
- Add the lentils, cumin, paprika, turmeric, salt, and pepper to the pot, and stir to combine.
- Pour in the beef broth and bring the stew to a boil. Then reduce the heat to low, cover, and simmer for 1.5 hours, or until the beef is tender and the lentils are cooked through.
