Ingredients

  • 1 lb beef stew meat, cubed
  • 1 cup dried brown lentils
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 6 cups beef broth
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the beef cubes and brown on all sides.
  2. Add the chopped onion and minced garlic to the pot, and sauté until fragrant.
  3. Stir in the diced carrots and celery, and cook for a few minutes until slightly softened.
  4. Add the lentils, cumin, paprika, turmeric, salt, and pepper to the pot, and stir to combine.
