Ashgabat Kayısı Reçeli, or Ashgabat Apricot Jam, is a traditional Turkmen jam made from ripe apricots. This sweet and tangy jam is perfect for spreading on toast, topping yogurt, or filling pastries.

Ashgabat Apricot Jam (Ashgabat Kayısı Reçeli)

Ingredients

  • 2 kg ripe apricots, pitted and chopped
  • 1.5 kg granulated sugar
  • Juice of 1 lemon

Instructions

  1. In a large pot, combine the chopped apricots and sugar. Let it sit for 1-2 hours to allow the sugar to draw out the juices from the apricots.
  2. After the resting period, place the pot over medium heat and bring the mixture to a boil, stirring occasionally.
  3. Once boiling, reduce the heat to low and let the jam simmer for about 1 hour, stirring occasionally, until it thickens.
  4. Stir in the lemon juice and cook for an additional 5 minutes.
  5. Remove the pot from the heat and let the jam cool slightly.
  6. Pour the jam into sterilized jars and seal. Allow the jam to cool completely before storing.
