Ingredients

  • 1 cup short-grain rice
  • 4 cups milk
  • 1/2 cup sugar
  • 1/4 teaspoon saffron threads
  • 1 teaspoon rose water
  • 2 tablespoons cornstarch
  • 1/4 cup chopped pistachios, for garnish

Instructions

  1. In a large pot, combine the rice and milk. Bring to a gentle boil over medium heat, stirring occasionally.
  2. Reduce the heat to low and simmer the rice and milk for 20 minutes, stirring frequently to prevent sticking.
  3. In a small bowl, dissolve the saffron threads in 2 tablespoons of hot milk. Add the saffron mixture to the rice pudding and stir well.
  4. In a separate bowl, mix the sugar and cornstarch. Gradually add this mixture to the rice pudding, stirring constantly until the pudding thickens.
  5. Remove the pot from the heat and stir in the rose water. Let the pudding cool for 10 minutes.
  6. Divide the saffron rice pudding into serving bowls and refrigerate for at least 2 hours, or until chilled.
  7. Before serving, garnish with chopped pistachios.
