Ashgabat Saffron Rice Pudding (Ashgabat Safranlı Sütlaç)
Ashgabat Safranlı Sütlaç, also known as Ashgabat Saffron Rice Pudding, is a traditional dessert from Turkmen cuisine. This creamy and aromatic rice pudding is flavored with saffron, giving it a beautiful golden color and a delightful fragrance.
Ingredients
- 1 cup short-grain rice
- 4 cups milk
- 1/2 cup sugar
- 1/4 teaspoon saffron threads
- 1 teaspoon rose water
- 2 tablespoons cornstarch
- 1/4 cup chopped pistachios, for garnish
Instructions
- In a large pot, combine the rice and milk. Bring to a gentle boil over medium heat, stirring occasionally.
- Reduce the heat to low and simmer the rice and milk for 20 minutes, stirring frequently to prevent sticking.
- In a small bowl, dissolve the saffron threads in 2 tablespoons of hot milk. Add the saffron mixture to the rice pudding and stir well.
- In a separate bowl, mix the sugar and cornstarch. Gradually add this mixture to the rice pudding, stirring constantly until the pudding thickens.
- Remove the pot from the heat and stir in the rose water. Let the pudding cool for 10 minutes.
- Divide the saffron rice pudding into serving bowls and refrigerate for at least 2 hours, or until chilled.
- Before serving, garnish with chopped pistachios.
