Ashlyamfu (uyghur Rice Pudding With Dried Fruits)
Ashlyamfu is a traditional Uyghur rice pudding with dried fruits that is popular in Xinjiang, China. This creamy and fragrant dessert is a delightful way to end a meal or enjoy as a sweet treat.
Ingredients
- 1 cup jasmine rice
- 4 cups water
- 1/2 cup sugar
- 1/2 cup dried apricots, chopped
- 1/4 cup raisins
- 1/4 cup dried cherries
- 1/4 cup slivered almonds
- 1/2 tsp ground cardamom
- 1/2 tsp rose water
Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- In a pot, combine the rice and water. Bring to a boil, then reduce heat to low and simmer for 15 minutes, stirring occasionally.
- Add the sugar, dried fruits, and almonds to the pot. Continue to simmer for another 10-15 minutes until the rice is soft and the mixture has thickened.
- Stir in the ground cardamom and rose water. Remove from heat and let the pudding cool for a few minutes.
- Divide the pudding into serving bowls and garnish with additional dried fruits and almonds if desired. Serve warm or chilled.
