Aspic (piftie)
Aspic, known as Piftie in Moldova, is a traditional dish made from meat stock that is allowed to set into a jelly. It is typically served cold and is a popular dish for special occasions and holidays.
Ingredients
- 2 lbs pork trotters
- 1 onion, chopped
- 2 carrots, chopped
- 2 bay leaves
- 10 black peppercorns
- 1 bunch parsley
- 1 lemon, sliced
- 1/2 cup white vinegar
- 1 packet unflavored gelatin
- Salt to taste
Instructions
- In a large pot, combine the pork trotters, onion, carrots, bay leaves, peppercorns, parsley, lemon, and vinegar. Add enough water to cover the ingredients.
- Bring the mixture to a boil, then reduce the heat and simmer for 3 hours, skimming off any foam that rises to the surface.
- Strain the stock and discard the solids. Measure out 6 cups of the stock and return it to the pot.
- Sprinkle the gelatin over the stock and let it sit for 5 minutes to bloom.
- Place the pot over low heat and stir until the gelatin has completely dissolved. Season with salt to taste.
- Pour the liquid into a mold or individual serving dishes and refrigerate for at least 6 hours, or until set.
- To serve, dip the mold into hot water for a few seconds, then invert it onto a serving platter. Garnish with fresh herbs and lemon slices.
