Aspic (piftie)

Aspic, known as Piftie in Moldova, is a traditional dish made from meat stock that is allowed to set into a jelly. It is typically served cold and is a popular dish for special occasions and holidays.

Ingredients

  • 2 lbs pork trotters
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 bay leaves
  • 10 black peppercorns
  • 1 bunch parsley
  • 1 lemon, sliced
  • 1/2 cup white vinegar
  • 1 packet unflavored gelatin
  • Salt to taste

Instructions

  1. In a large pot, combine the pork trotters, onion, carrots, bay leaves, peppercorns, parsley, lemon, and vinegar. Add enough water to cover the ingredients.
  2. Bring the mixture to a boil, then reduce the heat and simmer for 3 hours, skimming off any foam that rises to the surface.
  3. Strain the stock and discard the solids. Measure out 6 cups of the stock and return it to the pot.
  4. Sprinkle the gelatin over the stock and let it sit for 5 minutes to bloom.
  5. Place the pot over low heat and stir until the gelatin has completely dissolved. Season with salt to taste.
  6. Pour the liquid into a mold or individual serving dishes and refrigerate for at least 6 hours, or until set.
  7. To serve, dip the mold into hot water for a few seconds, then invert it onto a serving platter. Garnish with fresh herbs and lemon slices.
