Assyrian Chicken and Mushroom Risotto (Risotto d'Gosht)

Risotto d'Gosht is a traditional Assyrian dish that combines the creamy goodness of risotto with the rich flavors of chicken and mushrooms. This comforting and hearty meal is perfect for a cozy night in or a special gathering with loved ones.

Assyrian Chicken and Mushroom Risotto (Risotto d'Gosht)

Ingredients

  • 1 cup Arborio rice
  • 1 pound chicken breast, diced
  • 8 oz mushrooms, sliced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1/2 cup white wine
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the chicken broth over medium heat.
  2. In a separate pan, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat. Add the diced chicken and cook until browned. Remove the chicken from the pan and set aside.
  3. In the same pan, add the remaining olive oil and butter. Sauté the onions and garlic until softened.
  4. Add the Arborio rice to the pan and stir to coat the grains with the oil and butter.
  5. Pour in the white wine and cook until it has been absorbed by the rice.
  6. Begin adding the warm chicken broth to the rice, one ladle at a time, stirring constantly and allowing each addition to be absorbed before adding the next.
  7. After about 18-20 minutes, when the rice is almost cooked, add the sliced mushrooms and the cooked chicken to the risotto. Continue adding the broth until the rice is creamy and al dente.
  8. Stir in the grated Parmesan cheese and season with salt and pepper to taste.
  9. Remove from heat and let the risotto rest for a few minutes before serving.
