Assyrian Chicken and Mushroom Risotto (Risotto d'Gosht)
Risotto d'Gosht is a traditional Assyrian dish that combines the creamy goodness of risotto with the rich flavors of chicken and mushrooms. This comforting and hearty meal is perfect for a cozy night in or a special gathering with loved ones.
Ingredients
- 1 cup Arborio rice
- 1 pound chicken breast, diced
- 8 oz mushrooms, sliced
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1/2 cup white wine
- 1/2 cup grated Parmesan cheese
- 2 tablespoons butter
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the chicken broth over medium heat.
- In a separate pan, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat. Add the diced chicken and cook until browned. Remove the chicken from the pan and set aside.
- In the same pan, add the remaining olive oil and butter. Sauté the onions and garlic until softened.
- Add the Arborio rice to the pan and stir to coat the grains with the oil and butter.
- Pour in the white wine and cook until it has been absorbed by the rice.
- Begin adding the warm chicken broth to the rice, one ladle at a time, stirring constantly and allowing each addition to be absorbed before adding the next.
- After about 18-20 minutes, when the rice is almost cooked, add the sliced mushrooms and the cooked chicken to the risotto. Continue adding the broth until the rice is creamy and al dente.
- Stir in the grated Parmesan cheese and season with salt and pepper to taste.
- Remove from heat and let the risotto rest for a few minutes before serving.
