Assyrian Chicken Shawarma (Shawarma d'Pilpil)

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, thinly sliced
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 2 tsp ground cumin
  • 2 tsp paprika
  • 1 tsp ground turmeric
  • 1/2 tsp ground cinnamon
  • 1/4 tsp cayenne pepper
  • 1/4 cup plain yogurt
  • 3 tbsp olive oil
  • Salt and pepper to taste
  • 4 pita bread or flatbreads
  • Sliced tomatoes, cucumbers, and pickles for serving

Instructions

  1. In a large bowl, combine the sliced chicken, onion, garlic, cumin, paprika, turmeric, cinnamon, cayenne pepper, yogurt, and 2 tablespoons of olive oil. Season with salt and pepper. Toss to coat the chicken evenly. Marinate for at least 1 hour, or overnight for best results.
  2. Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the marinated chicken mixture and cook for 8-10 minutes, or until the chicken is cooked through and slightly charred.
  3. Warm the pita bread or flatbreads in a separate skillet or in the oven.
  4. To assemble the shawarma, place a generous amount of the cooked chicken mixture onto the warm pita bread. Add sliced tomatoes, cucumbers, and pickles. Roll up the bread and serve immediately.
