Assyrian Lamb Stew (Khoresht-e-Gosht)

Ingredients

  • 2 lbs lamb, cut into chunks
  • 2 onions, finely chopped
  • 3 tomatoes, diced
  • 1/4 cup tomato paste
  • 1/2 cup split yellow peas
  • 1 teaspoon turmeric
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground saffron
  • Salt and pepper to taste
  • 3 cups water

Instructions

  1. In a large pot, sauté the onions until golden brown.
  2. Add the lamb chunks and brown on all sides.
  3. Stir in the diced tomatoes, tomato paste, split yellow peas, turmeric, cinnamon, saffron, salt, and pepper.
  4. Pour in the water and bring to a boil.
  5. Reduce the heat, cover, and simmer for 2 hours, or until the lamb is tender.
  6. Adjust seasoning if needed and serve hot.
