Assyrian Lamb Stew (Khoresht-e-Gosht)
Khoresht-e-Gosht is a traditional Assyrian lamb stew that is rich in flavor and comforting to the soul. This hearty dish is perfect for a cozy family dinner or a special occasion.
Ingredients
- 2 lbs lamb, cut into chunks
- 2 onions, finely chopped
- 3 tomatoes, diced
- 1/4 cup tomato paste
- 1/2 cup split yellow peas
- 1 teaspoon turmeric
- 1 teaspoon cinnamon
- 1/2 teaspoon ground saffron
- Salt and pepper to taste
- 3 cups water
Instructions
- In a large pot, sauté the onions until golden brown.
- Add the lamb chunks and brown on all sides.
- Stir in the diced tomatoes, tomato paste, split yellow peas, turmeric, cinnamon, saffron, salt, and pepper.
- Pour in the water and bring to a boil.
- Reduce the heat, cover, and simmer for 2 hours, or until the lamb is tender.
- Adjust seasoning if needed and serve hot.
