Asturian Style Tuna Empanada (Empanada de Atún a la Asturiana)
Empanada de Atún a la Asturiana, or Asturian Style Tuna Empanada, is a traditional dish from the Asturias region of Spain. This savory pastry filled with tuna, onions, and peppers is perfect for a quick and delicious meal.
Ingredients
- 2 cans of tuna, drained
- 1 onion, finely chopped
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 hard-boiled eggs, chopped
- 1/2 cup tomato sauce
- 1/4 cup olive oil
- 2 sheets of puff pastry
- Salt and pepper to taste
Instructions
- In a pan, heat the olive oil over medium heat. Add the chopped onion and bell peppers, and sauté until softened.
- Add the drained tuna and tomato sauce to the pan. Cook for 5 minutes, then remove from heat and let it cool.
- Preheat the oven to 375°F (190°C).
- Roll out one sheet of puff pastry and place it on a baking sheet lined with parchment paper.
- Spoon the tuna filling onto the pastry, leaving a border around the edges.
- Sprinkle the chopped hard-boiled eggs over the tuna filling.
- Roll out the second sheet of puff pastry and place it over the filling. Press the edges to seal the empanada.
- Brush the top of the empanada with a beaten egg for a golden finish.
- Bake for 30-35 minutes, or until the pastry is golden brown.
- Let it cool for a few minutes before slicing and serving.
