Asturian Style Tuna Empanada (Empanada de Atún a la Asturiana)

Ingredients

  • 2 cans of tuna, drained
  • 1 onion, finely chopped
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 hard-boiled eggs, chopped
  • 1/2 cup tomato sauce
  • 1/4 cup olive oil
  • 2 sheets of puff pastry
  • Salt and pepper to taste

Instructions

  1. In a pan, heat the olive oil over medium heat. Add the chopped onion and bell peppers, and sauté until softened.
  2. Add the drained tuna and tomato sauce to the pan. Cook for 5 minutes, then remove from heat and let it cool.
  3. Preheat the oven to 375°F (190°C).
  4. Roll out one sheet of puff pastry and place it on a baking sheet lined with parchment paper.
  5. Spoon the tuna filling onto the pastry, leaving a border around the edges.
  6. Sprinkle the chopped hard-boiled eggs over the tuna filling.
  7. Roll out the second sheet of puff pastry and place it over the filling. Press the edges to seal the empanada.
  8. Brush the top of the empanada with a beaten egg for a golden finish.
  9. Bake for 30-35 minutes, or until the pastry is golden brown.
  10. Let it cool for a few minutes before slicing and serving.
