Ingredients
- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1/2 cup grated Manchego cheese
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1/4 teaspoon black pepper
- Vegetable oil for frying
Instructions
- In a large bowl, sprinkle the grated zucchini with salt and let it sit for 10 minutes. Then, squeeze out the excess moisture.
- In a separate bowl, combine the zucchini, flour, eggs, Manchego cheese, garlic, parsley, and black pepper. Mix until well combined.
- Heat vegetable oil in a large skillet over medium heat.
- Scoop spoonfuls of the zucchini mixture into the hot oil, flattening them slightly with the back of the spoon. Fry until golden brown on both sides, about 3-4 minutes per side.
- Transfer the fritters to a paper towel-lined plate to drain excess oil.
