Ingredients
- 4 large zucchinis, thinly sliced lengthwise
- 1 cup Asturian-style tomato sauce
- 1 cup grated Asturian cheese
- 1 cup sautéed mushrooms
- 1 cup spinach, cooked and drained
- 1 cup ricotta cheese
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Spread a thin layer of tomato sauce on the bottom of a baking dish.
- Layer the zucchini slices over the sauce, then spread a layer of ricotta cheese, followed by mushrooms, spinach, and garlic. Sprinkle with oregano, basil, salt, and pepper.
- Repeat the layers until all ingredients are used, finishing with a layer of zucchini and tomato sauce on top.
- Sprinkle the grated Asturian cheese over the top layer.
- Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes until the cheese is golden and bubbly.
