Crema de Calabacín a la Asturiana is a traditional Asturian-style zucchini soup that is creamy, flavorful, and perfect for a comforting meal.
Ingredients
- 4 medium zucchinis, chopped
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups vegetable broth
- 1/2 cup heavy cream
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and garlic, and sauté until softened.
- Add the chopped zucchinis and cook for 5 minutes.
