Atay (moroccan Mint Tea)
Atay, or Moroccan mint tea, is a traditional drink in Western Saharan cuisine that is enjoyed throughout the day. This sweet and refreshing tea is a symbol of hospitality and is often served to guests.
Ingredients
- 4 cups water
- 4 teaspoons loose green tea
- 1 bunch fresh mint
- 3/4 cup sugar
Instructions
- Bring the water to a boil in a pot.
- Add the loose green tea to the boiling water and let it steep for 5 minutes.
- Meanwhile, wash the mint leaves and place them in a teapot.
- Pour the steeped tea over the mint leaves in the teapot.
- Add the sugar to the teapot and stir until the sugar is dissolved.
- Let the tea steep with the mint leaves for an additional 5 minutes.
- Pour the tea into small glasses from a height to create a frothy layer on top.
