Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups fish or seafood stock
- 1 cup heavy cream
- 1 pound white fish fillets, cut into chunks
- 1 pound mixed seafood (such as shrimp, scallops, and/or clams)
- 2 cups potatoes, diced
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
- Add the carrots and celery, and cook for a few minutes until they start to soften.
- Pour in the fish or seafood stock and bring to a simmer.
- Add the potatoes and simmer until they are tender.
- Stir in the heavy cream, white fish, and mixed seafood. Cook for about 5-7 minutes until the seafood is cooked through.
- Season with salt and pepper, and sprinkle with fresh parsley before serving.
