Aush Kadoo (spiced Pumpkin And Lentil Soup)
Aush Kadoo is a traditional Afghan soup made with spiced pumpkin and lentils. It's a comforting and flavorful dish that is perfect for the fall and winter seasons.
Ingredients
- 2 cups pumpkin, peeled and diced
- 1 cup red lentils
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 6 cups vegetable broth
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and cook until softened.
- Add the diced pumpkin, red lentils, turmeric, coriander, and cinnamon to the pot. Stir to combine with the onions and garlic.
- Pour in the vegetable broth and bring the soup to a boil. Reduce the heat and let it simmer for 30 minutes, or until the pumpkin and lentils are tender.
- Use an immersion blender to blend the soup until smooth. Season with salt and pepper to taste.
- Serve the Aush Kadoo hot, garnished with a dollop of yogurt and a sprinkle of fresh herbs if desired.
