Ingredients

  • 2 cups pumpkin, peeled and diced
  • 1 cup red lentils
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 6 cups vegetable broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and cook until softened.
  2. Add the diced pumpkin, red lentils, turmeric, coriander, and cinnamon to the pot. Stir to combine with the onions and garlic.
  3. Pour in the vegetable broth and bring the soup to a boil. Reduce the heat and let it simmer for 30 minutes, or until the pumpkin and lentils are tender.
  4. Use an immersion blender to blend the soup until smooth. Season with salt and pepper to taste.
  5. Serve the Aush Kadoo hot, garnished with a dollop of yogurt and a sprinkle of fresh herbs if desired.
