Aush (spiced Lamb And Lentil Soup)
Aush is a traditional Afghan soup that is hearty, flavorful, and perfect for warming up on a cold day. This spiced lamb and lentil soup is a staple in Afghan cuisine and is often enjoyed with a side of bread or rice.
Ingredients
- 1 lb lamb, cubed
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp turmeric
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 cup red lentils
- 6 cups water or broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, brown the lamb over medium heat.
- Add the onion and garlic, and cook until softened.
- Stir in the turmeric, coriander, and cumin, and cook for 1-2 minutes.
- Add the lentils and water or broth, and bring to a boil.
- Reduce heat, cover, and simmer for 45 minutes, or until the lamb and lentils are tender.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh cilantro.
