Aussie Meat Pie Deluxe

Ingredients
- 500g ground beef
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 2 tbsp tomato paste
- 1 cup beef stock
- 2 tbsp Worcestershire sauce
- Salt and pepper to taste
- 2 sheets of ready-rolled puff pastry
- 1 egg, beaten (for egg wash)
Instructions
- In a large saucepan, brown the ground beef over medium heat.
- Add the onion and garlic, and cook until softened.
- Stir in the carrot and celery, and cook for a few minutes.
- Add the tomato paste, beef stock, Worcestershire sauce, salt, and pepper. Simmer for 20 minutes, or until the mixture has thickened.
- Preheat the oven to 200°C (400°F).
- Line a pie dish with one sheet of puff pastry.
- Pour the meat mixture into the pastry-lined dish.
- Place the second sheet of puff pastry over the filling, and press the edges to seal. Trim any excess pastry.
- Brush the top of the pie with beaten egg.
- Bake for 30-35 minutes, or until the pastry is golden brown.
