Aussie Veggie Laksa (澳洲蔬菜叻沙)
This Aussie Veggie Laksa recipe combines the flavors of Australian and Chinese cuisine to create a delicious and comforting dish.
Ingredients
- 400g rice noodles
- 1 can (400ml) coconut milk
- 2 cups vegetable stock
- 1 onion, sliced
- 2 garlic cloves, minced
- 1 red chili, sliced
- 1 cup broccoli florets
- 1 cup sliced carrots
- 1 cup snow peas
- 1 cup bean sprouts
- 2 tbsp laksa paste
- 2 tbsp soy sauce
- 1 tbsp brown sugar
- 1 lime, juiced
Instructions
- In a large pot, heat the laksa paste for 1-2 minutes.
- Add the onion, garlic, and chili, and cook for 3-4 minutes.
- Pour in the coconut milk and vegetable stock, and bring to a simmer.
- Add the carrots and broccoli, and cook for 5 minutes.
- Stir in the soy sauce, brown sugar, and lime juice.
- Add the snow peas and bean sprouts, and cook for 2-3 minutes.
- Cook the rice noodles according to the package instructions.
- Divide the noodles into serving bowls and ladle the laksa over the top.
