Aussie Veggie Laksa (澳洲蔬菜叻沙)

Ingredients

  • 400g rice noodles
  • 1 can (400ml) coconut milk
  • 2 cups vegetable stock
  • 1 onion, sliced
  • 2 garlic cloves, minced
  • 1 red chili, sliced
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 cup snow peas
  • 1 cup bean sprouts
  • 2 tbsp laksa paste
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 lime, juiced

Instructions

  1. In a large pot, heat the laksa paste for 1-2 minutes.
  2. Add the onion, garlic, and chili, and cook for 3-4 minutes.
  3. Pour in the coconut milk and vegetable stock, and bring to a simmer.
  4. Add the carrots and broccoli, and cook for 5 minutes.
  5. Stir in the soy sauce, brown sugar, and lime juice.
  6. Add the snow peas and bean sprouts, and cook for 2-3 minutes.
  7. Cook the rice noodles according to the package instructions.
  8. Divide the noodles into serving bowls and ladle the laksa over the top.
