Ingredients
- 1 lb ground beef
- 2 green plantains
- 1 cup grated yautia (taro root)
- 1/2 cup sofrito (a mix of onions, peppers, cilantro, and garlic)
- 1 tsp adobo seasoning
- 1 tsp ground cumin
- 1/2 cup vegetable oil (for frying)
- Salt to taste
Instructions
- Peel the plantains and yautia, then grate them using a box grater.
- In a large bowl, mix the grated plantains and yautia with the ground beef, sofrito, adobo seasoning, cumin, and salt.
- Take a small portion of the mixture and form it into a cylindrical shape, about 3 inches long and 1 inch in diameter.
- Heat the vegetable oil in a deep pot or fryer to 350°F (175°C).
- Carefully place the alcapurrias into the hot oil and fry until golden brown, about 6-8 minutes.
- Remove the alcapurrias from the oil and place them on a paper towel to drain excess oil.
- Serve hot and enjoy!
