Ingredients
- 1 lb lamb, cubed
- 2 onions, chopped
- 3 tomatoes, diced
- 1 red bell pepper, sliced
- 1 cup rice
- 2 cups chicken broth
- 1/4 cup olive oil
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the lamb cubes and brown on all sides.
- Add the chopped onions and cook until translucent.
- Stir in the diced tomatoes, sliced red bell pepper, paprika, cumin, salt, and pepper. Cook for 5 minutes.
- Add the rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 30 minutes or until the rice is cooked and the lamb is tender.
- Remove from heat and let it rest for 5 minutes before serving.
