Awadhi Biryani (lucknowi Biryani)

Ingredients

  • 2 cups basmati rice
  • 500g chicken, cut into pieces
  • 1 cup yogurt
  • 2 onions, thinly sliced
  • 4 tomatoes, chopped
  • 1/4 cup ghee
  • 1/4 cup milk
  • 1/2 teaspoon saffron strands
  • Whole spices: bay leaves, cardamom, cinnamon, cloves
  • Fresh coriander leaves, for garnish

Instructions

  1. Wash and soak the basmati rice for 30 minutes.
  2. Marinate the chicken with yogurt, salt, and biryani masala for 1 hour.
  3. Heat ghee in a pan and sauté the onions until golden brown.
  4. Add the marinated chicken and cook until the chicken is tender.
  5. Boil the soaked rice with whole spices until 70% cooked.
  6. Layer the cooked chicken and rice in a heavy-bottomed pan, and cook on low heat for 20 minutes.
  7. Warm the milk and infuse saffron strands in it.
  8. Drizzle the saffron-infused milk over the biryani and garnish with fresh coriander leaves.
