Awadhi Biryani (lucknowi Biryani)
Awadhi Biryani, also known as Lucknowi Biryani, is a classic dish from the Mughlai cuisine, known for its aromatic flavors and tender meat. This royal dish is a must-try for biryani enthusiasts.
Ingredients
- 2 cups basmati rice
- 500g chicken, cut into pieces
- 1 cup yogurt
- 2 onions, thinly sliced
- 4 tomatoes, chopped
- 1/4 cup ghee
- 1/4 cup milk
- 1/2 teaspoon saffron strands
- Whole spices: bay leaves, cardamom, cinnamon, cloves
- Fresh coriander leaves, for garnish
Instructions
- Wash and soak the basmati rice for 30 minutes.
- Marinate the chicken with yogurt, salt, and biryani masala for 1 hour.
- Heat ghee in a pan and sauté the onions until golden brown.
- Add the marinated chicken and cook until the chicken is tender.
- Boil the soaked rice with whole spices until 70% cooked.
- Layer the cooked chicken and rice in a heavy-bottomed pan, and cook on low heat for 20 minutes.
- Warm the milk and infuse saffron strands in it.
- Drizzle the saffron-infused milk over the biryani and garnish with fresh coriander leaves.
