Awadhi Dum Paneer (Slow-cooked Paneer Curry)

Ingredients

  • 500g paneer, cubed
  • 1 cup yogurt
  • 2 onions, finely chopped
  • 2 tomatoes, pureed
  • 1/2 cup cashew nuts, ground into a paste
  • 1/4 cup ghee
  • 1 cinnamon stick
  • 4-5 green cardamom pods
  • 1 teaspoon cumin seeds
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. In a bowl, mix the yogurt with the cashew nut paste and set aside.
  2. Heat ghee in a heavy-bottomed pan and add the cinnamon stick, cardamom pods, and cumin seeds. Sauté until fragrant.
  3. Add the chopped onions and cook until golden brown.
  4. Stir in the ginger-garlic paste and cook for a minute.
  5. Pour in the tomato puree and cook until the ghee separates from the mixture.
  6. Add the red chili powder, turmeric powder, and garam masala. Cook for a few minutes.
  7. Now, add the yogurt and cashew nut mixture. Stir well and cook for 5-7 minutes.
  8. Gently add the cubed paneer and mix carefully to coat the paneer with the sauce.
  9. Cover the pan with a tight-fitting lid and let the curry simmer on low heat for 30-40 minutes.
  10. Once done, garnish with fresh coriander leaves and serve hot with naan or rice.
