Ingredients

  • 500g chicken, cut into pieces
  • 1 cup bamboo shoots, sliced
  • 2 tbsp axone (fermented soybean)
  • 1 onion, finely chopped
  • 3-4 cloves garlic, minced
  • 1-inch ginger, grated
  • 2-3 green chilies, slit
  • 1 tomato, chopped
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • Salt to taste
  • 2 tbsp mustard oil
  • Fresh coriander leaves for garnish

Instructions

  1. Marinate the chicken pieces with turmeric powder and salt. Set aside for 15 minutes.
  2. Heat mustard oil in a pan and add the axone. Sauté for a minute.
  3. Add the chopped onions, garlic, ginger, and green chilies. Cook until the onions are translucent.
  4. Now, add the marinated chicken and cook until it turns golden brown.
  5. Stir in the sliced bamboo shoots and chopped tomatoes. Cook for another 5 minutes.
  6. Add red chili powder and salt to taste. Mix well.
  7. Cover and cook on low heat for 30-40 minutes, stirring occasionally.
  8. Garnish with fresh coriander leaves and serve hot.
