Ingredients
- 4 chicken thighs
- 1/2 cup dark rum
- 3 cloves garlic, minced

- 1/4 teaspoon cayenne pepper
- 1 lime, juiced
- 2 tablespoons vegetable oil

Instructions
- In a bowl, mix together the rum, garlic, soy sauce, brown sugar, ginger, black pepper, cayenne pepper, lime juice, and vegetable oil to make the marinade.
- Place the chicken thighs in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 2 hours, or overnight for best results.
- Preheat the grill to medium-high heat and lightly oil the grate.
- Remove the chicken from the marinade and season with salt. Discard the remaining marinade.
- Grill the chicken thighs for 6-7 minutes per side, or until they are no longer pink in the center and the juices run clear.
- Remove from the grill and let rest for a few minutes before serving.
