Ingredients

  • 1 lime, juiced

Instructions

  1. In a bowl, mix together the rum, garlic, soy sauce, brown sugar, ginger, black pepper, cayenne pepper, lime juice, and vegetable oil to make the marinade.
  2. Place the chicken thighs in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat the grill to medium-high heat and lightly oil the grate.
  4. Remove the chicken from the marinade and season with salt. Discard the remaining marinade.
  5. Grill the chicken thighs for 6-7 minutes per side, or until they are no longer pink in the center and the juices run clear.
  6. Remove from the grill and let rest for a few minutes before serving.
