Ayam Bakar Sayap (grilled Chicken Wings)

Ingredients

  • 1 kg chicken wings
  • 4 cloves garlic, minced
  • 2 shallots, finely chopped
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon salt
  • 1 tablespoon brown sugar
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1 tablespoon tamarind paste
  • 1 lemongrass stalk, bruised
  • 4 kaffir lime leaves

Instructions

  1. In a bowl, mix together garlic, shallots, ground coriander, ground turmeric, salt, brown sugar, soy sauce, vegetable oil, and tamarind paste to make the marinade.
  2. Add the chicken wings to the marinade and coat them evenly. Let it marinate for at least 1 hour in the refrigerator.
  3. Preheat the grill to medium-high heat.
  4. Grill the marinated chicken wings for about 20-25 minutes, turning occasionally, until they are cooked through and have a nice charred exterior.
  5. Serve the grilled chicken wings hot, garnished with lemongrass and kaffir lime leaves.
