Ayam Bakar Serai (lemongrass Marinated Grilled Chicken)
Ayam Bakar Serai is a traditional Madurese grilled chicken dish that is marinated with lemongrass and other aromatic spices, resulting in a flavorful and fragrant chicken dish.
Ingredients
- 4 chicken thighs
- 4 stalks lemongrass, white part only, finely chopped
- 4 cloves garlic, minced
- 2 shallots, finely chopped
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon salt
- 1 tablespoon brown sugar
- 2 tablespoons vegetable oil
- 1 tablespoon lime juice
Instructions
- In a bowl, mix the lemongrass, garlic, shallots, turmeric powder, coriander powder, salt, brown sugar, vegetable oil, and lime juice to make the marinade.
- Score the chicken thighs with a sharp knife and rub the marinade all over the chicken. Marinate for at least 1 hour, or preferably overnight in the refrigerator.
- Preheat the grill to medium-high heat. Grill the chicken thighs for about 5-7 minutes on each side, or until fully cooked and slightly charred.
- Remove the chicken from the grill and let it rest for a few minutes before serving.
