Ingredients

  • 4 chicken thighs
  • 4 stalks lemongrass, white part only, finely chopped
  • 4 cloves garlic, minced
  • 2 shallots, finely chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon salt
  • 1 tablespoon brown sugar
  • 2 tablespoons vegetable oil
  • 1 tablespoon lime juice

Instructions

  1. In a bowl, mix the lemongrass, garlic, shallots, turmeric powder, coriander powder, salt, brown sugar, vegetable oil, and lime juice to make the marinade.
  2. Score the chicken thighs with a sharp knife and rub the marinade all over the chicken. Marinate for at least 1 hour, or preferably overnight in the refrigerator.
  3. Preheat the grill to medium-high heat. Grill the chicken thighs for about 5-7 minutes on each side, or until fully cooked and slightly charred.
  4. Remove the chicken from the grill and let it rest for a few minutes before serving.
