- 10 green chilies

- Salt to taste
- Water
- Oil for frying
Instructions
- Grind the green chilies, shallots, garlic, tomato, lemongrass, and galangal into a smooth paste.
- Heat oil in a pan and fry the chicken thighs until golden brown. Set aside.
- In the same pan, sauté the ground paste until fragrant.
- Add tamarind paste, sugar, and salt. Mix well.
- Pour in water and bring the sauce to a simmer.
- Add the fried chicken thighs into the sauce and cook until the chicken is fully cooked and the sauce thickens.
- Serve the Ayam Balado Hijau hot with steamed rice.
