Ingredients

  • 4 chicken thighs, bone-in
  • 10 green chilies
  • 5 shallots
  • 4 cloves garlic
  • 1 tomato
  • 1 lemongrass stalk
  • 1 inch galangal
  • 1 teaspoon tamarind paste
  • 1 teaspoon sugar
  • Salt to taste
  • Water
  • Oil for frying

Instructions

  1. Grind the green chilies, shallots, garlic, tomato, lemongrass, and galangal into a smooth paste.
  2. Heat oil in a pan and fry the chicken thighs until golden brown. Set aside.
  3. In the same pan, sauté the ground paste until fragrant.
  4. Add tamarind paste, sugar, and salt. Mix well.
  5. Pour in water and bring the sauce to a simmer.
  6. Add the fried chicken thighs into the sauce and cook until the chicken is fully cooked and the sauce thickens.
  7. Serve the Ayam Balado Hijau hot with steamed rice.
