Ingredients

  • 2 cups basmati rice, rinsed and soaked for 30 minutes
  • 1 whole chicken, cut into pieces
  • 2 onions, thinly sliced
  • 4 cloves garlic, minced
  • 1-inch ginger, grated
  • 1/2 cup plain yogurt
  • 2 tomatoes, chopped
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped mint leaves
  • 2 tablespoons ghee
  • 1 cinnamon stick
  • 4 cardamom pods
  • 4 cloves
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder
  • Salt to taste

Instructions

  1. In a large pot, heat ghee over medium heat. Add cinnamon stick, cardamom pods, cloves, and cumin seeds. Sauté until fragrant.
  2. Add sliced onions and cook until golden brown.
  3. Add minced garlic and grated ginger, and cook for 2 minutes.
  4. Add chicken pieces, turmeric powder, chili powder, and salt. Cook until the chicken is browned.
  5. Stir in plain yogurt and chopped tomatoes. Cook for 5 minutes.
  6. Layer the soaked basmati rice over the chicken mixture. Add 4 cups of water and bring to a boil.
  7. Reduce heat to low, cover the pot, and let it simmer for 20 minutes or until the rice is cooked and the chicken is tender.
  8. Garnish with chopped cilantro and mint leaves before serving.
