Ayam Briyani (fragrant Chicken Briyani)
Ayam Briyani, also known as Fragrant Chicken Briyani, is a popular dish in Malaysian Indian cuisine. It is a flavorful and aromatic rice dish that is perfect for special occasions and gatherings.
Ingredients
- 2 cups basmati rice, rinsed and soaked for 30 minutes
- 1 whole chicken, cut into pieces
- 2 onions, thinly sliced
- 4 cloves garlic, minced
- 1-inch ginger, grated
- 1/2 cup plain yogurt
- 2 tomatoes, chopped
- 1/4 cup chopped cilantro
- 1/4 cup chopped mint leaves
- 2 tablespoons ghee
- 1 cinnamon stick
- 4 cardamom pods
- 4 cloves
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon chili powder
- Salt to taste
Instructions
- In a large pot, heat ghee over medium heat. Add cinnamon stick, cardamom pods, cloves, and cumin seeds. Sauté until fragrant.
- Add sliced onions and cook until golden brown.
- Add minced garlic and grated ginger, and cook for 2 minutes.
- Add chicken pieces, turmeric powder, chili powder, and salt. Cook until the chicken is browned.
- Stir in plain yogurt and chopped tomatoes. Cook for 5 minutes.
- Layer the soaked basmati rice over the chicken mixture. Add 4 cups of water and bring to a boil.
- Reduce heat to low, cover the pot, and let it simmer for 20 minutes or until the rice is cooked and the chicken is tender.
- Garnish with chopped cilantro and mint leaves before serving.
