Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the shallots, garlic, lemongrass, and kaffir lime leaves. Cook until fragrant.
- Add the belacan, ground coriander, turmeric, cumin, and chili powder. Stir well to combine.
- Add the chicken thighs and cook until browned on all sides.
- Add the buah keluak nuts, tamarind paste, and coconut milk. Stir to combine, then cover and simmer for 1.5 hours, stirring occasionally.
- Season with salt to taste and serve hot with steamed rice.
