Ayam Debal (chicken Debal)
Ayam Debal, also known as Chicken Debal, is a traditional Eurasian dish that is popular in Singapore and Malaysia. It is a spicy and tangy chicken curry that is packed with flavor and perfect for serving with rice or bread.
Ingredients
- 1 whole chicken, cut into pieces
- 5 shallots, chopped
- 4 cloves garlic, minced
- 2 lemongrass stalks, bruised
- 3 tablespoons tamarind paste
- 1 tablespoon turmeric powder
- 1 tablespoon chili powder
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 cup coconut milk
- Salt to taste
- Sugar to taste
Instructions
- In a large pot, heat some oil and sauté the shallots and garlic until fragrant.
- Add the lemongrass, tamarind paste, turmeric powder, chili powder, coriander, and cumin. Cook for a few minutes until the spices are aromatic.
- Add the chicken pieces and stir to coat them with the spice mixture.
- Pour in the coconut milk and bring the curry to a simmer. Cover and cook for about 45 minutes, or until the chicken is tender.
- Season with salt and sugar to taste.
