Ingredients

  • 1 whole chicken, cut into pieces
  • 5 shallots, chopped
  • 4 cloves garlic, minced
  • 2 lemongrass stalks, bruised
  • 3 tablespoons tamarind paste
  • 1 tablespoon turmeric powder
  • 1 tablespoon chili powder
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 cup coconut milk
  • Salt to taste
  • Sugar to taste

Instructions

  1. In a large pot, heat some oil and sauté the shallots and garlic until fragrant.
  2. Add the lemongrass, tamarind paste, turmeric powder, chili powder, coriander, and cumin. Cook for a few minutes until the spices are aromatic.
  3. Add the chicken pieces and stir to coat them with the spice mixture.
  4. Pour in the coconut milk and bring the curry to a simmer. Cover and cook for about 45 minutes, or until the chicken is tender.
  5. Season with salt and sugar to taste.
