Ingredients

  • 4 chicken thighs

  • 2 cups vegetable oil for frying

  • 3 cloves garlic, minced
  • 2 tomatoes, diced
  • 2 red chilies, sliced
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 cup water

Instructions

  1. In a bowl, mix the all-purpose flour, 1 teaspoon of salt, and 1 teaspoon of black pepper.
  2. In another bowl, beat the eggs.
  3. Dip each chicken thigh in the egg, then coat with the seasoned flour mixture.
  4. Heat the vegetable oil in a pan over medium-high heat. Fry the chicken thighs until golden brown and cooked through. Remove and set aside.
  5. In the same pan, sauté the chopped onion and minced garlic until fragrant.
  6. Add the diced tomatoes, sliced red chilies, sugar, and salt. Cook until the tomatoes are soft and the mixture becomes saucy.
  7. Pour in the water and let the sauce simmer for a few minutes.
  8. Add the fried chicken thighs into the sauce, coating them evenly.
