Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 1/4 cup soy sauce
  • 3 tablespoons fresh ginger, grated
  • 4 cloves garlic, minced
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon brown sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 cup water

Instructions

  1. In a bowl, mix soy sauce, grated ginger, minced garlic, ground coriander, ground turmeric, brown sugar, salt, and black pepper.
  2. Marinate the chicken thighs in the mixture for at least 15 minutes.
  3. Heat vegetable oil in a large pan over medium heat. Add the marinated chicken thighs and cook until browned on both sides.
  4. Pour in the water and bring to a simmer. Cover and cook for 30 minutes, or until the chicken is tender.
  5. Serve the Fragrant Ginger Chicken hot with steamed rice.
