Ayam Kapitan (Captain's Chicken Curry)

Ingredients

  • 1 whole chicken, cut into pieces
  • 2 onions, finely chopped
  • 4 cloves garlic, minced
  • 3 tablespoons curry powder
  • 1 teaspoon turmeric powder
  • 1 tablespoon tamarind paste
  • 4 kaffir lime leaves
  • 1 stalk lemongrass, bruised
  • 400ml coconut milk
  • 2 tablespoons cooking oil
  • Salt to taste

Instructions

  1. Heat the cooking oil in a large pot over medium heat.
  2. Add the chopped onions and minced garlic, and sauté until fragrant.
  3. Add the curry powder and turmeric powder, and stir until the spices are aromatic.
  4. Add the chicken pieces to the pot and coat them with the spice mixture.
  5. Pour in the coconut milk, tamarind paste, kaffir lime leaves, lemongrass, and salt. Stir well to combine.
  6. Cover the pot and let the curry simmer for 45-50 minutes, or until the chicken is tender.
  7. Once the chicken is cooked, remove the pot from the heat and let it rest for a few minutes before serving.
