Ingredients
- 1 whole chicken, cut into pieces
- 2 onions, finely chopped
- 4 cloves garlic, minced
- 3 tablespoons curry powder
- 1 teaspoon turmeric powder
- 1 tablespoon tamarind paste
- 4 kaffir lime leaves
- 1 stalk lemongrass, bruised
- 400ml coconut milk
- 2 tablespoons cooking oil
- Salt to taste
Instructions
- Heat the cooking oil in a large pot over medium heat.
- Add the chopped onions and minced garlic, and sauté until fragrant.
- Add the curry powder and turmeric powder, and stir until the spices are aromatic.
- Add the chicken pieces to the pot and coat them with the spice mixture.
- Pour in the coconut milk, tamarind paste, kaffir lime leaves, lemongrass, and salt. Stir well to combine.
- Cover the pot and let the curry simmer for 45-50 minutes, or until the chicken is tender.
- Once the chicken is cooked, remove the pot from the heat and let it rest for a few minutes before serving.
