Ayam Penyet (sambal Belacan Chicken)

Ingredients

  • 4 chicken thighs
  • 1 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Oil for frying
  • 4 cups water spinach (kangkung) or cucumber slices
  • 4 cups steamed white rice

Instructions

  1. Prepare the sambal belacan by grinding 5 red chilies, 3 bird's eye chilies, 2 cloves of garlic, 1/2 tsp of shrimp paste, and 1 tsp of sugar in a mortar and pestle until smooth.
  2. Season the chicken thighs with salt and black pepper, then coat them with flour.
  3. Heat oil in a pan and fry the chicken until golden and crispy, about 8-10 minutes per side.
  4. Serve the fried chicken with sambal belacan, water spinach or cucumber, and steamed white rice.
