Ingredients
- 4 chicken thighs
- 1 cup all-purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
- Oil for frying
- 4 cups water spinach (kangkung) or cucumber slices
- 4 cups steamed white rice
Instructions
- Prepare the sambal belacan by grinding 5 red chilies, 3 bird's eye chilies, 2 cloves of garlic, 1/2 tsp of shrimp paste, and 1 tsp of sugar in a mortar and pestle until smooth.
- Season the chicken thighs with salt and black pepper, then coat them with flour.
- Heat oil in a pan and fry the chicken until golden and crispy, about 8-10 minutes per side.
- Serve the fried chicken with sambal belacan, water spinach or cucumber, and steamed white rice.
