Ingredients

  • 1 inch ginger, grated
  • 2 tablespoons tamarind paste
  • 2 tablespoons palm sugar
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder
  • Salt to taste

Instructions

  1. In a bowl, mix together coconut milk, shallots, garlic, lemongrass, ginger, tamarind paste, palm sugar, turmeric powder, chili powder, and salt to make the marinade.
  2. Marinate the chicken pieces in the mixture for at least 2 hours, or preferably overnight in the refrigerator.
  3. Preheat the grill to medium-high heat.
  4. Grill the marinated chicken pieces for 10-12 minutes on each side, or until fully cooked and slightly charred.
