Ingredients
- 1 whole chicken, cut into pieces
- 1 cup coconut milk
- 4 shallots, chopped

- 2 lemongrass stalks, bruised

- 2 tablespoons tamarind paste
- 3 tablespoons palm sugar
- 1 teaspoon salt
- 1 teaspoon turmeric powder
- 1 tablespoon vegetable oil
Instructions
- In a blender, combine coconut milk, shallots, garlic, lemongrass, ginger, tamarind paste, palm sugar, salt, and turmeric powder. Blend until smooth.
- Heat vegetable oil in a pan over medium heat. Add the blended mixture and cook for 10-15 minutes, stirring occasionally, until the sauce thickens.
- Preheat the grill to medium-high heat. Grill the chicken pieces for 15-20 minutes, turning occasionally, until fully cooked and charred in spots.
