Ingredients

  • 1 whole chicken, cut into pieces
  • 1 cup coconut milk
  • 4 shallots, chopped
  • 3 cloves garlic, minced
  • 2 lemongrass stalks, bruised
  • 1 inch galangal, sliced
  • 2 tablespoons tamarind paste
  • 4 tablespoons palm sugar
  • 1 teaspoon turmeric powder
  • Salt to taste

Instructions

  1. In a blender, combine coconut milk, shallots, garlic, lemongrass, galangal, tamarind paste, palm sugar, turmeric powder, and salt. Blend until smooth.
