Ingredients
- 1 whole chicken, cut into pieces
- 1 cup coconut milk
- 4 shallots, chopped
- 3 cloves garlic, minced
- 2 lemongrass stalks, bruised
- 1 inch galangal, sliced
- 2 tablespoons tamarind paste
- 4 tablespoons palm sugar
- 1 teaspoon turmeric powder
- Salt to taste
Instructions
- In a blender, combine coconut milk, shallots, garlic, lemongrass, galangal, tamarind paste, palm sugar, turmeric powder, and salt. Blend until smooth.
- Marinate the chicken pieces with the blended sauce for at least 2 hours or overnight in the refrigerator.
