Ingredients
- 1 whole chicken, cut into pieces
- 1 cup coconut milk
- 4 shallots, chopped
- 3 cloves garlic, minced
- 2 lemongrass stalks, bruised
- 1 inch ginger, grated
- 2 tablespoons tamarind paste
- 2 tablespoons palm sugar
- 1 teaspoon turmeric powder
- 1 teaspoon chili powder
- Salt to taste
Instructions
- In a bowl, mix together coconut milk, shallots, garlic, lemongrass, ginger, tamarind paste, palm sugar, turmeric powder, chili powder, and salt to make the marinade.
- Marinate the chicken pieces in the prepared marinade for at least 2 hours, or preferably overnight in the refrigerator.
- Preheat the grill to medium-high heat. Grill the marinated chicken pieces for about 20-25 minutes, turning occasionally, until they are fully cooked and have a nice charred exterior.
- Once grilled, remove the chicken from the grill and let it rest for a few minutes before serving.
