Ingredients

  • 1 whole chicken, cut into pieces
  • 1 cup coconut milk
  • 4 shallots, chopped
  • 3 cloves garlic, minced
  • 2 lemongrass stalks, bruised
  • 1 inch ginger, grated
  • 2 tablespoons tamarind paste
  • 2 tablespoons palm sugar
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder
  • Salt to taste

Instructions

  1. In a bowl, mix together coconut milk, shallots, garlic, lemongrass, ginger, tamarind paste, palm sugar, turmeric powder, chili powder, and salt to make the marinade.
  2. Marinate the chicken pieces in the prepared marinade for at least 2 hours, or preferably overnight in the refrigerator.
  3. Preheat the grill to medium-high heat. Grill the marinated chicken pieces for about 20-25 minutes, turning occasionally, until they are fully cooked and have a nice charred exterior.
  4. Once grilled, remove the chicken from the grill and let it rest for a few minutes before serving.
