Ingredients

  • 1.5 kg chicken, cut into pieces
  • 4 cups thick coconut milk
  • 5 kaffir lime leaves
  • 2 lemongrass stalks, bruised
  • 4 red chilies, sliced
  • 6 shallots, finely chopped
  • 4 cloves garlic, minced
  • 1 inch galangal, sliced
  • 1 inch ginger, sliced
  • 1 turmeric leaf, torn
  • Salt to taste

Instructions

  1. Heat a large pot over medium heat and add the coconut milk, kaffir lime leaves, lemongrass, red chilies, shallots, garlic, galangal, ginger, and turmeric leaf. Cook for 5 minutes, stirring occasionally.
  2. Add the chicken pieces to the pot and stir to coat them with the coconut milk mixture.
  3. Reduce the heat to low and simmer for 45-60 minutes, stirring occasionally, until the chicken is tender and the sauce has thickened.
  4. Season with salt to taste and continue to simmer for another 10 minutes.
  5. Once the chicken is tender and the sauce has thickened, remove from heat and serve hot.
