Ayam Rendang Pedas (spicy Chicken Rendang)
Ayam Rendang Pedas, or Spicy Chicken Rendang, is a traditional dish from Banjar Cuisine that is rich in flavor and aroma. This dish is known for its tender chicken simmered in a spicy coconut milk sauce, resulting in a deliciously fragrant and spicy meal.
Ingredients
- 1.5 kg chicken, cut into pieces
- 4 cups thick coconut milk
- 5 kaffir lime leaves
- 2 lemongrass stalks, bruised
- 4 red chilies, sliced
- 6 shallots, finely chopped
- 4 cloves garlic, minced
- 1 inch galangal, sliced
- 1 inch ginger, sliced
- 1 turmeric leaf, torn
- Salt to taste
Instructions
- Heat a large pot over medium heat and add the coconut milk, kaffir lime leaves, lemongrass, red chilies, shallots, garlic, galangal, ginger, and turmeric leaf. Cook for 5 minutes, stirring occasionally.
- Add the chicken pieces to the pot and stir to coat them with the coconut milk mixture.
- Reduce the heat to low and simmer for 45-60 minutes, stirring occasionally, until the chicken is tender and the sauce has thickened.
- Season with salt to taste and continue to simmer for another 10 minutes.
- Once the chicken is tender and the sauce has thickened, remove from heat and serve hot.
